August is here, marking the beginning of the end of summer. We suggest taking it slow by gazing at the beauty of the glorious sunflowers and sun-kissed skies. Soak in the warmth of August and smell the lilies as you go about your routine.

Monthly Health Observance: Summer Sun Safety Month

It’s summer and there’s ample sunshine to bask in and receive the goodness of vitamin D and the other health benefits. Sunlight boosts the serotonin levels in your body, increasing your energy, and keeping your mind focused and your mood positive and calm. You need around 10-15 minutes of sunlight 2-3 times a week during the summer and a bit more during the winter to receive your daily dose of vitamin D. 

However, unprotected sun exposure can be dangerous. It can cause serious damage to your skin, eyes, and immune system. The United States Food and Drug Administration (FDA) recommends using a broad-spectrum sunscreen with an SPF of at least 15, even on cloudy days or when you’re indoors. Wear long-sleeved clothing, broad-brimmed hats, and sunglasses to reduce sun exposure.

Barbie Themed Recipes

Soak in the Barbie movie trend with these healthy treats to elevate your meals this August.

Watermelon Radish Chips

Servings: 2

Ingredients:

  • 10 ounces watermelon radish slices
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/4 teaspoon fresh ground black pepper, optional

Method:

  • Peel radishes and then slice them with a mandolin slicer. Make sure to use the guard and stop before the end of each radish. The blade is sharp.
  • In a medium-large bowl, add the sliced watermelon radishes, add the olive oil, salt, and pepper, and mix until coated. 
  • Add the slices in a single layer in the air fryer basket, set the air fryer to 300-320 degrees, and cook for 15 minutes and turn over, cook for another 15 minutes, turn, and continue to cook, checking every 5-10 minutes intervals until done. They will shrink a lot and be careful not to let them get brown/burn them. Using tongs, pull out any chips that seem done as they cook and place them on a plate to cool. Sprinkle them with salt and enjoy!

Vegan Rainbow Spring Rolls

Servings: 4

Ingredients:

  • 4 rice paper sheets
  • 2 tablespoons almond butter, divided
  • ½ red beet, shredded
  • ½ red bell pepper, cored and julienned 
  • 1 carrot, sliced thin
  • 1 medium avocado, pitted and sliced
  • Nama shoyu, for dipping

Method: 

  • Into a large, 3-inch-deep pan filled with room-temperature water, lay a dry rice paper sheet for 5 to 10 seconds. Remove, lay flat on a cutting board, and pat with a paper towel to remove excess moisture.
  • Spread ¼ tablespoon almond butter along the center of the sheet. Add ¼ beet, bell pepper, carrot, avocado, and kimchi. Fold the sides over and then roll like a burrito. Repeat with remaining sheets and vegetables and serve with nama shoyu.

Rosewater Lemonade

Servings: 8

Ingredients:

  • 1 1/2 cups lemon juice, freshly squeezed
  •  1 cup rose water
  •  1 cup granulated white sugar
  • 4-6 cups water, amount to taste, start with 4 cups and adjust from there
  •  lemon slices, for garnishing
  • rose petals, food grade, edible, for garnishing
  • ice, amount to taste, optional

Method

  • In a large beverage dispenser or pitcher, combine 1 1/2 cups freshly squeezed lemon juice, rose water simple syrup (1 cup rose water plus 1 cup granulated white sugar), and 4-6 cups of water, and stir to combine. Chill until ready to serve.
  • Garnish with lemon slices and additional rose petals, if you wish. Serve with ice, and enjoy!
